Pineapple Fried Rice

Got leftover rice? Flip it into something fabulous with Pineapple Fried Rice! 

Ingredients

Ingredients:
- 1 whole pineapple
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 small onion, diced
- 1/2 lb pork (or protein of choice), diced
- 1 cup diced pineapple (use from the fresh pineapple)
- 2 cups cooked rice
(At Thai Heirloom, we like the mix of Thai jasmine and lightly polished pandan rice)
- Salt, to taste
- 1 tbsp oyster sauce
- 1 tbsp coconut aminos (or soy sauce)
- 1/4 tsp white pepper
- 1/2 tsp curry powder
- Fried sausage slices (for garnish)
- Pork floss (for garnish)

Instructions

Instructions:
1. Prepare the Pineapple Bowl
- Cut the pineapple in half lengthwise, keeping the stem intact for presentation.
- Use a knife to score the flesh in a grid pattern, then scoop it out to create a bowl. Save the pineapple chunks for the fried rice or a smoothie!

2. Stir-Fry
- In a large skillet or wok, melt the butter over medium heat. Add minced garlic and diced onions, stirring until fragrant and golden.
- Add diced pork and cook until browned.
- Toss in the pineapple chunks and stir-fry for another 2 minutes.

3. Add the Rice and Seasonings
- Add the cooked rice to the skillet, stirring to break up any clumps.
- Season with salt, oyster sauce, coconut aminos, white pepper, and curry powder. Stir until everything is well combined and heated through.

4. Garnish and Serve
- Scoop the fried rice into the pineapple bowl.
- Garnish with fried sausage slices and pork floss on top for a delicious, authentic finish!
