  • When you’re ready for a quick fix: wrap a piece in a damp paper towel and zap it in the microwave for 1 minute(straight from the freezer works too).

Mix & knead
Throw everything into your kneader or bread machine: the pre-cooked sticky rice, yeast, sugar, salt, water, coconut milk, ice, and butter. Let the machine do its magic until a smooth, elastic dough forms.

First rest:
Cover and let the dough rest for about 45 minutes, until puffy and relaxed (honestly, same).

Shape:
Plop the dough onto a floured surface. Divide into small pieces and roll each into a ball. Place them on a baking pan, giving them a little personal space. They’ll expand later.

Second rest:
Let them rest for another 45 minutes while your oven preheats to 385°F.

Bake:
Bake for 20–25 minutes, until golden brown and slightly glossy on top.

Cool & serve:
Let them cool slightly before tearing apart. Serve with Thai sweet chili jam and grated salted egg yolk for that sweet-spicy-savory contrast that shouldn’t work but totally does.
